The Kiritsuke!  Considered a knife only used by master chefs in Japan.  When others use one knife for one task, the master chef uses the Kiritsuke to complete multiple tasks.  The Kiritsuke comes from either CPM 154 or CPM s35vn stainless steels.  It is approx. 12" in OAL with a 7" blade length.  Keep an eye out for more information on my YouTube channel to see this blade and several others being released in 2020!
